Red Berry Tea

Do you remember the days when if you asked for tea you were never asked ‘which one?’ Tea was tea, right?

Nowadays there is so much choice. I love a cup of berry tea. But I have found it difficult to find a plastic free version that isn’t too expensive or has the right flavour. Some tea makers put herbs in and I personally don’t like that much. This recipe is one I love. Made with freeze-dried fruits it is full of the flavour and the vitamins that these little red berries bring with them.

Red Berry Tea.

YOU WILL NEED

75g dried apple - chopped

50g dried hibiscus flowers

50g freeze-dried blackcurrants

25g of freeze-dried raspberries

25g of freeze-dried strawberries

5g of freeze-dried elderberries

METHOD

Weigh all your ingredients, chopping or breaking up any that look too large. I usually buy apple slices and chop them and I snap the dried strawberries with my fingers. Place all of the ingredients in a bowl and mix well but gently so as not to turn the precious berries to dust, the strawberries and raspberries are particularly delicate. Decant into your Kilner jar or similar. This will make 230g of tea.

To make the tea, put 4 to 5 spoons of the tea in your teapot or teapot strainer. Fill with water that has been heated to about 90 degrees, or just off boiling. Steep for several minutes.

Now here is my tip for making your pot last the whole day. Pour your first cup straight from the pot and enjoy. But leave the tea to steep, the longer it brews the stronger the flavour. Remove the strainer full of berries after about one hour. Now you can treat it like a fruit juice concentrate. When you are ready for your next cup, add about 1 inch of the now cold tea into the bottom of your cup. Top up with boiling water and enjoy. This is a little tip I learnt on a trip to Russia. It was how they made their tea and it made perfect sense to me.
